A kind of pancake from the islands.


  • 500g flour
  • 125g cornmeal
  • 1.5 teaspoon of salt
  • 3 tablespoons of sugar
  • 2 tablespoons of baking powder


Sift all the dry ingredients together. Add water and be sure to mix well, without lumps, until you reach a thick pancake batter consistency. Heat a large non-stick pan or griddle until very hot. Using a piece of kitchen paper, spread a very thin layer of oil over the pan. When it begins to smoke, pour a cup of batter into the pan and tilt the pan to all sides to get an even thickness. When bubbles form everywhere and the Pan Bati looks dry, flip it over with a spatula. If you want it crunchier, let it cook a few minutes longer. Cut to desired serving size.
