Antillean pastechi
This is an authentic Aruban recipe.
Ingredients:
3 1/2 cups of flour
1 1/2 cups of hydrogenated fat such as solid frying fat
1/4 sugar
1 teaspoon of salt
Ice cold water
Preparation:
Cut the hardened fat into the flour. Add sugar and salt. Add just enough ice-cold water and mix until all the flour is moistened. Handle the dough gently, mixing lightly. DON'T KNOW. Divide the dough into long rolls. Cut into 1-inch slices. Roll out each slice until thin and round. Place a small amount of filling on the dough, fold inside 1/4 inch, seal and then pinch closed. Fry in a mixture of oil and frtuur fat that is very hot.
FILLING: The filling for pastechi can be anything you like, such as vegetable cheese or soy mince.
NOTE: These can be partially cooked and then stored in the freezer for later use.
